PRINT VERSION: Blueberry Lemon Muffins

INGREDIENTS


  1. Bullet1 1/2 cup butter

  2. Bullet1 1/2 cup sugar

  3. Bullet3 eggs

  4. Bullet1 1/2 tsp real vanilla extract

  5. Bullet1 cup sour cream

  6. Bullet1/4 cup milk

  7. Bullet2 1/2 cup flour

  8. Bullet2 tsp baking powder

  9. Bullet1/2 tsp baking soda

  10. Bullet1/2 tsp salt

  11. Bullet1 tbsp grated lemon zest

  12. Bullet1 cup fresh blueberries


DIRECTIONS


  1. BulletPreheat your oven to 350.

  2. BulletBeat in a mixer the butter, sugar and eggs together on low speed.

  3. BulletAdd the wet ingredients.

  4. BulletSift in dry ingredients and mix with a wooden spoon.

  5. BulletStir in blueberries and lemon zest, do not over mix.

  6. BulletSpoon mixture into muffin pan lined with one or two muffin cups.

  7. BulletBake for 25-30 minutes.


Makes 1 dozen muffins (depending on the size of your muffin tin)


Tip: If you don’t have any sour cream, plain yogurt is a great substitute.
