Cranberry Oatmeal Muffins

Today’s post comes from the recipe box of my good friend, Carly. Her Cranberry Oatmeal muffins are delicious, and I’m sure this recipe will become one of your favourites too!
Cranberry Oatmeal Muffins
Ingredients:
1 cup rolled oats
1 cup yogurt (I use vanilla)
1/2 cup oil

1/2 cup brown sugar
1 egg
1 cup whole wheat flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons grated orange rind
1 cup cranberries
Directions:
1) Preheat oven to 400F
2) Soak oats in yogurt just enough to make them moist
3) Sift dry ingredients into a bowl
4) In a separate bowl, add oil, sugars, and egg
5) Beat until well blended
6) Mix in yogurt/oat mixture
7) Gradually fold in dry ingredients
8) Add cranberries
9) Pour into greased muffin tins
10)Bake for 20 minutes or until light golden brown on top

She loves baking and usually shares her yummy treats with her great family and friends so she won’t eat everything herself!
